About the Author
Madhur Jaffrey is the author of many previous cookbooks—seven of which have won James Beard Awards—and was named to the Who’s Who of Food and Beverage in America by the James Beard Foundation. She is the recipient of an honorary CBE from Queen Elizabeth II for her services to drama and promoting the appreciation of Indian food and culture. She is also an award-winning actress, having won the Silver Bear for Best Actress at the Berlin Film Festival, with numerous major motion pictures to her credit. She lives in New York City.

I just bought the ebook version since my original lovely Knopf version, purchased in the 70s, fell apart.Madhur's first book is a classic introduction to Indian cooking (in this case from the Northern Delhi region) for Western cooks with dozens of delicious, foolproof recipes. I particularly like the gentle introduction to the cooking methods, such as increasingly complex recipes for chicken or lamb, but without dumbing them down. each is delicious. Still come back to this book frequently after starting using it in the 70s, Every pretty TV face and blogger today tries to do what Madhur so perfectly accomplished 40+ years ago.
As a newlywed in 1973, I tried to make foods from my husbands native India. He'd always say "This is ok, but its nothing like MY family eats." At the library one day, I found "Invitation to Indian Cooking", and noted that the author was from my husband's hometown of Dehli.Needless to say, every recipe I tried got raves. (The recipes I tried earlier were regional to southern India, mainly Hyderabad, as were most of the Indians locally at the time. Great food, but quite different than Dehli cuisine) I ran out and purchased a copy for myself (which has been replaced 4 times over the years due to overuse). My kids each requested and received a copy when they wed. My grandkids will too.Now I am delighted to have a kindle copy, with all my favorite recipes ready to share.Thank you, Madhur!
I purchased this book when it was originally published in the year I married a Punjabi man who grew up in New Delhi. The original copy was literally crumbling in my hands when I ordered a new one 44 years later. Her approach of adapting ingredients and techniques when that produces a result closer to the finished dish in India is apparently successful, because I have been using it to cook for friends and family all these years without anyone thinking the end result was inauthentic.
This guide to the intricacies of Indian cooking held many surprises -- not the least that there is no curry in India. Apparently, an enterprising Englishman coined the term during the British Raj to explain the local cuisine to the folks back home. The name stuck and the rest, as they say, is history. I hope Ms. Jaffrey will forgive me for using it to categorize her recipes. Yes, there are other foods included but it's the curries that make the book. An enthusiastic 5 stars.
I have always loved this book; my original copy (bought ~ 1980), was literally falling apart from extensive use. I am so glad to find this on Amazon!!!! Excellent recipes and wonderful stories from the author! Her writing style is both encouraging and engaging, and she breaks things down in a very nonintimidating way. If you love both cooking and Indian food, I would highly recommend this and any other cookbook she's written!
I bought this book once and lost it when I moved. I ordered another because the recipes are plainly written, also with discussion of Indian traditions and recipes from different localities. It includes menus and every recipe I have tried is wonderful.
A good Indian cookbook. I've tried some of her recipes and found them easy to follow. The results always came out as expected. I'm anxious to try more.
I gave this to my husband as a gift, after a lot of research about Indian cookbooks. This is an older book, but covers the basics of Indian food for an American cook. We've made a few recipes and they have turned out well. Her writing style is engaging. I really appreciate the introduction sections that go over various ingredients and techniques. A few things seem dated (cilantro is no longer an exotic ingredient to find!), but overall the book stands the test of time and provides a great introduction to authentic Indian cooking.
